We hope you’ve had a little extra time to prepare home-cooked meals lately! We’d like to share some of our teams’ family recipes and employee favorites with you. Every month, we’ll share one of our teams’ recipes.
Back in February, we hosted our Annual Soup and Chili Cook-off! Training Specialist, Billie Hardison won the soup contest with her Tortellini & Sausage Soup.
From our kitchen to yours:
1/2 lb ground sausage
6 oz frozen cheese tortellini or ravioli
2 cans 14 oz Italian crushed tomatoes or fire roasted diced tomatoes (Billie used the fire roasted)
1/2 box frozen chopped spinach, thawed
2 beef bouillon cubes dissolved in water 2 cups water
- In large soup pot, brown and drain sausage.
- Add remaining ingredients. Heat to boiling and simmer for 10 min until tortellini is soft.
OR, you can put in a crock pot and cook on low for 6 hours. (This is the method Billie used).
