In the kitchen with Advocate Capital was a virtual cooking event hosted by Advocate Capital’s wellness committee on Good Friday, April 2nd. With cameras and tripods set up on our kitchen counters, our inaugural virtual cooking session began. And it was so much fun to gather in our kitchens and try out a healthy new recipe – zucchini fries!
Advocate Capital is committed to the health and wellness of its employees as demonstrated by this event. Each employee who participated could TER and be reimbursed for all the ingredients needed for the recipe!
This healthy recipe is low cost, minimal prep, cleanup and not to mention, absolutely delicious!
Recipe for zucchini fries:
Cut 1 large zucchini into fries, sit on a paper towel for 5-10 minutes to capture excess moisture.
Mix ¼ cup of almond flour, 1 tsp paprika, and ½ tsp salt in a small bowl
Crack 1 egg into another small bowl and mix well
Dip zucchini fries into egg, then into the almond flour mixture, and place flat on a lined baking pan
Bake at 375 degrees for 15 minutes, flip, then bake for another 10 minutes (or bake in an air fryer for 15-20 minutes)
